Pumpkin & Paprika Soup

Pumpkin & Paprika Soup

A rich & delicious pumpkin soup, perfect for those cold nights to come!!


800g pumpkin, peeled, seeded & cubed

2 med size onions cut into wedges

2 large carrots, coarsely chopped

2 ½ tablespoon of veg/olive oil

1 large potato, chopped

1tr water

2 cubes of veg/chicken stock, crumbled

2 teaspoon of ground nutmeg

Ground black pepper (to taste)

2 to 3 teaspoons paprika (to taste)


230ml double cream


Pre heat oven to 220c / gas 7

Place pumpkin, carrots & onions on a baking dish, drizzles with the oil

Bake of about 30/40min, until soft

In a large saucepan bring to boil the water and add the stock cubes, cook potatoes for about 20mins or till soft on a simmer.

Combine potato & stock mix with roasted vegetables and puree in a food processor until smooth.  Return to pan on low heat and add cream, pepper, salt, nutmeg and paprika. Heat gently and then serve.
