Chunky Tomato & Lentil Soup
A lightly spiced, flavoursome soup. Perfect Autumnal Homemade dish, Yum!!
2 tbps olive oil
1 onion, finely chopped
3cm piece of fresh ginger, peeled & finely chopped
3 cloves of finely chopped garclic
2tsp garam masala
1tsp ground cumin
1 red pepper, deseeded & finely chopped
250g dried red lentils, washed
1.2 ltr veg stock
50ml single cream

Heat oil in a large heatproof dish over a med heat. Add the onion & fry for 4-5 mins until soft. Add ginger, garlic,ground cumin and garam masala,& stir. Add red pepper & cook for another 3-4 mins.
Pour in the passata,lentils, stock and stir well. Bring to the boil, then reduce heat & simmer for 30-40mins or untill the lentils are soft.
Season with salt and freshly ground black pepper, keeping the soup over a low heat, serve with a drizzle of cream.
