Beef Stew Pie
This really is a dish for whatever you have in the fridge and cupboard. I put a pie top on as my kids love puff pastry, but it can be served as just a stew with some chunky bread.
400/500g braising steak, cut into big chunks
2 onions, chopped small
2 med carrots, chopped
Mushrooms (as many or little as you want) sliced
New potatoes cut in half if big
600ml beef stock
Herb pot or any mixed herbs (dry or fresh)
Salt and pepper to taste
Ready rolled puff pastry
Egg or milk
On the hob in a large cooking pot, fry onions & carrots for about 5 minuets
Add the meat & mushrooms till meat is browned
Add herb pot, salt, pepper, potatoes & stock. Bring to the boil. Simmer on a low heat with lid on for about 2.5 hrs, or until the meat is tender. Remove lid for last half hour of cook to help thicken the sauce.
Place meat mix in a pie dish, add puff pastry top (I normally cut strips of the pastry and line the top edge of the dish to help it stay in place), and brush top of pie with beaten egg or milk.
Place in oven 180c for about 20/25min or until golden.
Serve with some veg!!
